Here is a vegan recipe for French toast using a French baguette. This, paired with real maple syrup...well all I can say is YUM!
I found the recipe on food.com. I used almond milk which I make myself and add cinnamon and a little agave nectar into the blend but you can use any kind of nut, soy or oat milk from the store.
This recipe calls for nutritional yeast. Not your every day type of baker's yeast. This yeast is usually used for its nutritional value. It is an excellent source of fiber, complete protein, and several B vitamins, and some brands are fortified with additional vitamin B12. You can buy it in a health food store. It has a nutty flavor which is really quite good. See my post on nutritional yeast here for ways to use it.
Vegan French Toast

Ingredients:
1 cup vanilla-flavored soymilk or any kind of nut milk
2 tablespoons flour
1 tablespoon sugar
1 tablespoon nutritional yeast
1 teaspoon cinnamon
4 -6 slices bread (I buy a French baguette at Panera's but any kind of bread will work
Directions:
- Mix together the first 5 ingredients.
- Dip pieces of bread in the mixture and cook on a skillet until it's golden-brown. If you're not a strict vegan, you can use butter on the skillet. If you are, then use a little bit of olive oil - it works just fine.
