One of the absolutely most delicious lentil soups I've ever eaten!!! Created by my friend Jennifer. Please! Make this soup - you will not be disappointed!

Ingredients:
1 bag of lentils (12-16oz)
2 large red potatoes
2 large parsnips
1 large yellow onion
2 garlic cloves
1 14 ounce can of coconut milk
10 cups of water
2 tsp of base of 2 bouillon cubes
2 tbsp of tomato paste
2 tsp salt
1.5 tsp turmeric
2 tsp cumin
1 tsp white pepper
1 tsp coriander
2 tsp curry
fresh cilantro
1 tbsp extra virgin olive oil
Directions:
Chop the onion, dice the potatoes and parsnips, and mince the garlic. Carmelize the onions and garlic, add all liquid ingredients followed by the vegetables and spices last. Bring to a boil and then simmer uncovered for 45 minutes to 1 hour depending on your preferred texture for lentils. Garnish with chopped cilantro and serve!
